Has anyone made a good sourdough pizza crust?

I know many paleo dieters make meatza or pizza crust using cauliflower, but has anyone made a good pizza crust using sourdough?

Link to the cauliflower crust recipe? I make my pizza crust out of sausage, which is great, but an alternative every now and again would be nice.

Yes, long-fermented sour dough starter and then use that to make a long-fermented pizza dough. For son and husband who still want pizza. I use the same recipe to make their bread wkly. They bypass most other bread outside of home.

Yes, I've got a couple of starters and have made numerous kinds of sourdough pizza crust. I've never long-fermented the dough, though. All of the variations I've tried include wheat flour though, so definitely not gluten free. Let me know if you want more details.

I accidentally made it once for my family by leaving a premade bag of Trader Joe's Pizza Dough in the fridge for about a week past the expiration date. It was way tastier than using it fresh. Whenever I make pizza for them now, I try to buy the dough ahead of time so it can sour.

I had a sour dough starter once upon a time, but I cook bread so rarely that lost its way in the back of the fridge and eventually died from neglect.
