Pistachios, Almonds

I do not see pistachios listed on any of the sites, Can I eat pastachios? Also can almonds be eaten roasted and salted?

I've been known to eat an Oreo because they taste good, yes. But I think a pistachio is in an entirely different league of food.

yeah why not? learn how to control yourself and there should be no problem enjoying an oreo occasionally.

A WAPF article says the following: Unfortunately, we have very little information on phytate reduction in nuts. Soaking for seven hours likely eliminates some phytate. Based on the accumulation of evidence, soaking nuts for eighteen hours, dehydrating at very low temperatures—a warm oven—and then roasting or cooking the nuts would likely eliminate a large portion of phytates.

According my quick google search, Chris Kresser says only this: Modern evidence also suggests that at least some of the phytate can be broken down by soaking and roasting. The majority of this data indicates that soaking nuts for eighteen hours, dehydrating at very low temperatures (either in a food dehydrator or a low temperature oven), and then roasting or cooking the nuts would likely eliminate a large portion of the phytic acid.

I love pistachios, so I say yes indeed. Almonds are good. Some people watch the salt, but I don't. I think roasted is okay, but better to roast them yourself if you can.

Be mindful of your omega-6 fat intake when you eat nuts. According to Chris Kresser, you should cap O-6 intake at somewhere between 4???8% of your calories (depending on who you believe. Just 1/2C of pistachio nut meat or almonds alone provides 4% of calories. If your diet includes other sources of O-6 fats, like chicken or eggs, or grain-fed animals, you need to eat less that day.

Plus, nuts contain some powerful anti-nutrients:

  • phytates, which prevent absorption of water-based minerals
  • protein enzyme inhibitors, which prevent you from using the protein in the nuts

That said, you can eat roasted and salted almonds, within the limits I mentioned above.

I've found that it's SUPER easy for me to overconsume nuts so I rarely keep them in the house. I have found that pistachios a little harder to overeat than some of the others because it takes a little more effort to get them open :).

Love pistachios! Of course, it is easy to overdo it on the nuts so I find that it is better to get them (at least the pistachios) in shells so I don't eat too many. As far as the rest goes, I buy my nuts raw and unsalted and prefer eating them that way. Agree with above, if you want roasted and salted then roast and salt them yourself. That way you can control what goes on them and how long they bake.
