tried and true pancake recipes?

I've tried a few but the egg flavor has been very prominent.

Wrong. You don't need eggs to hold it together. The oil and nuts do that by themselves. I've made nut butter pancakes dozens of times, they work perfectly without eggs and look like pancakes too. And not everyone tolerates eggs well. One less ingredient = simpler recipe than yours. ;)

I've used a banana bread recipe before (a mix of coconut flour / almond flour / rice flour / egg / vanilla / cinnamon / honey / mashed bananas / squeeze of lemon) fried in butter ghee and drenched in grade b maple syrup. A little carby, but tasty.

i like mine soaked the night before with yogurt. they fluff up really well just adding an egg and a pinch of baking soda

I've done the banana method - mashed bananas, a hint of cinnamon and nutmeg, fried to solidness - but it just doesn't taste like pancakes to me, so if I have a cheat day - normally when I'm home from college and don't have to pay - I'll get my mom's fluffy pancakes, bacon, and some fruits on the side.

i like one banana mashed with one egg. i add a little cinnamon to the batter and then fry in butter.

Step 1: Nut butter

Step 2: Skillet + oil

Step 3: heat

Pancakes.

No need for eggs. No need for any sweeteners. No need for flour.

I don't eat them anymore but something like this works well if you like the strong taste of BW. You could dilute that with a starch or almond meal, etc. Since Paleo has set in for me I just go with 3 eggs and bacon or sardines

  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 2 Tbsp sweetener or LESS, applesauce - be creative - I would use a small bit of honey, could even used mashed banana.
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 cup milk or a mix of yogurt/milk, or coconut milk
  • 2 Tbsp melted butter or mix of coconut oil/butter
