And definitely keep the heat low. Though I used a higher heat on one of them, and it ended up crispy on the outside and battery on the inside, which was fine by me! Just watch them or they'll burn.

I used a recipe similar to this this morning. 4 tbsp almond flour, but I forgot to whisk the eggs so I added a tbsp of coconut flour to thicken it up. Lots of cinnamon, little nutmeg and vanilla extract, delicious!

Ignore the comment below, these pancakes have a wonderful doughy texture, even my non-paleo mom likes these pancakes. Add cocoa powder and honey and they're like brownie pancakes.

Just cook them on a low-medium heat, not a high heat or they'll burn when you're not looking.

For the love of god, don't make coconut flour pancakes. Every recipe I've tried is appalling. The green plantain recipe looks promising.

The Paleo Mom's Perfect Paleo pancakes are the best I've ever tried; they use green plantains.

Just made some this morning -

~3tbsp ground almond meal and 1tbsp coconut flour 1/2 tsp salt, cinnamon, some alum-free baking powder 1/2 tsp

3 eggs whisked frothy added 3 tbsp melted butter, maybe 4tbsp sweetened a bit with stevia

these cooked up way way better than plain coconut flour... the almonds worked great keep the heat LOW - key is too cook em low and slow

i just do 1 banana mashed up with 1 egg. it honestly tastes way better than regular pancakes in my opinion. i just add some coconut oil to a pan and pour the batter in. i usually do medium heat and wait til it bubbles a lot before flipping. some of my pancakes usually fall apart, but im not too concerned about appearance.

2 eggs/1 banana ratio. Hit it up in a blender and pour it like pancakes cooked in butter or coconut oil. Is flat out easy and tastes great. Another favorite of my kids.

I made my first almond pancakes this morning. Got the recipe off Peanut Butter Fingers blog, called Almond Butter Pancakes. I used almond meal instead of almond flour, as that's what I had. Pretty tasty. Very filling, as expected. You definitely only need 1-2 to be sated.

I make waffles like this: 2 really ripe bananas, smushed; 4 eggs; 1.5 cups almond flour or ground up almonds; 1tsp cinnamon; pinch baking powder.

oil the waffle iron first or they'll stick.

1 egg, 1 tbs coconut milk, 1 tbs coconut flour, little baking soda, little vanilla extract, cinnamon to taste, and up # of eggs/coconut milk/coconut flour depending on how many people you're cooking for. I love this recipe myself ^_^ Didn't care too much for the almond flour pancakes.
