Does anyone have an "instant" paleo pancake recipe?

I'm slowly weaning my mom off of grains, but she does love her pancakes. I'm going down for Thanksgiving to visit and I thought it would be great if I could mix up some dry ingredients and "package" it with instructions (i.e. add coconut milk, eggs, whatever) but keep it as simple as possible. If she's got to worry about more ingredients than would normally be on the back of a Bisquick box, she probably won't use it. Any ideas?

I might have added a bit of potato starch to them, but not much. I served my with sorghum syrup, which is an interesting addition (though carb-laden).

Click the link for a picture of the ones I made. They're not exactly pancakes, but then neither are the others I posted! Nut butter + eggs is the basic recipe for paleo bread, so not unexpected that pancakes result when griddled.

Added in links to the recipes. I'm sure somebody else has made the nut butter pancakes, but developed my own recipe as opposed to using another's.

Thanks Matt, I'll float these by her now as they sound simple enough she could swing it (she's not much of a cook)

@Matt 11 How on earth did nut butter and eggs make a pancake haha?! Did it turn out pancakey?

I've tried a few paleo pancakes over the years and I certainly have my favorite, but here are the options:

Banana & Egg Pancakes - literally just ripe bananas and eggs blended until smooth. Cooked on a griddle, they come out looking like pancakes, but are pretty delicate. Nothing to put in a box either. Link: http://thedomesticman.com/2013/01/29/two-ingredient-pancakes/

Nut butter & Egg pancakes - literally just nut butter and eggs blended until smooth. Cook as you would a normal pancake. They are my favorite, very pancake like. Nothing to put in a box. Recipe (as I've developed it): 1/4 cup nut butter (almond or sunflower seed butters work), 1 egg, pinch of salt and baking soda. Butternut Squash/Almond Flour Pancakes - There's a recipe over at Jan's Sushi Bar website for these. Feel free to substitute canned pumpkin. They turn out nice, but lack the bready texture of the conventional pancakes. Link: http://www.janssushibar.com/butternut-squash-pancakes/
