Will you support a paleo food truck?

I have launched a project on kickstarter and am asking for this communities help. I promise if it goes off like Pebble did I will launch in multiple cities :) I think the branding has a shot at being very strong. Please view and pass this link.

@April, I just remembered that the Flinestones eat Fruity Pebbles. The Paleo Diet has been completely wrong this whole time. Food-dyed cereals for the win!

As a former owner of three food carts in Portland and Eugene (Oregon), I will give you my two cents. In Portland, they care about the owner story, the uniqueness of the cart, and then, finally, the food. A cart with zero starchy filler and no cheese may be slightly difficult to build clientele. Granted, every paleo person with a car in your area will go there.

The approach I'd take:

Find every crossfit gym in your area and work them hard.

Try to accommodate vegetarians and vegans. Even though we know it's not good for us, you want to get them to buy from you, get enlightened, and become loyal customers as they're already health conscious.

Use cheap cuts of quality meats, braised. Seriously. A lot of people are price sensitive to new things. I just remembered that you've worked in restaurants and have an MBA, so you've already planned this, I'm sure.

Have a Cadillac on the menu. Always have a luxury item that's 100%-200% of the average item. Some people are misers. But about 1 in 10 will want the most expensive item, no matter what.

Sell to the drunks outside of the bars. You're going to have greasy, fatty foods. Drunk people crave salty, fatty foods like this and tip like crazy. Believe me on this one. It's worth losing sleep or hiring someone to run it.
