Ok--so several years ago I quit eating like an "average" person and really limited my carbohydrates and grains. I did not give them up entirely though, until last spring, during a hard push to eliminate a few pounds from marathon training. Unfortunately, I ended up eating more carbs than ever for about 6 months (after a good 2 months completely grain free), as a result of almost no fat in my diet leading me to feeling starving all the time. Now, I didn't return exactly to an "average" diet but I did have something every day. There were spells in there when I would eat "clean" though.
After the holidays I really connected the gluten with my arthritis, and I quit eating it, but still had oatmeal, very very occasional potato, rice, etc (3 times a month). Finally, about the third week of March, I started eating very clean with no oatmeal or grains, but some starchy veggies like squash and sweet potatoes. About the 18th of March or so, I gave up even those and have felt WONDERFUL. Did some limited HIIT training instead of heavy weights and long runs, and lost the weight, obvious loss of body fat. Have just about 3 pounds to go. (I am 5'5 and 124 and have been lifting weights for 5 years, 3xweek) BUT.....
Suddenly, the last week, (truly only about 8 days) I have had THE WORST gas. STINKY. STINKY. I am right now not even eating nuts, because I think they were bothering me. But even today and yesterday, with no nuts, STINKY. I have been eating the same exact foods almost for over 4 weeks.
Sample day's menu, and NONE of this has EVER bothered me before. I have eaten all of these for a year almost exactly.
Breakfast: Shake with water, coconut milk, small amount of nonfat greek yogurt (Fage), frozen berries, some 100% whey protein powder
Lunch--Light tuna with very very small (half tbs) of mayo, mustard, laughing cow light cheese, both spread on butter lettuce leaves with Franks hot sauce (eaten this for years) (Occasionally fruit. Today I had a pear)
Snack, sometimes a string cheese
Dinner. Either Wild Alaskan Cod or roasted chicken breast, sauteed mushrooms (in coconut oil) and mixed cauliflower and broccoli with a little of the jalepeno yogurt from Costco, and a quarter Avocado sliced on top of fish/chicken. Homemade blue cheese dressing (lowfat buttermilk and lowfat cottage cheese blended with 1oz gorgonzola and 1/2 tsp red sodium seasoning salt and dried onion) drizzled over veggies.
Snack: sliced strawberries. Hot tea with splash of half/half
Coffee twice a day with Sweet leaf Stevia and half/half.
I have eaten these things forever and NEVER had the stinky gas I do now! My husband is like WTF, heh. The nuts I suspected of giving me gurgling stomach, I have not had it since I last ate them, but the gas is STILL HERE.
I measured my veggie intake last April and it was 8 cups/day. I measured in Feb and same. I think it's actually slightly less now, so what is up?
I also rested for 6 days last week from all exercise, since I had done serious HIIT for 15 out of 18 days and felt I needed it. Did Tabata today.
Sorry this is so long, but I felt it needed explanation. Nothing is really different except the coconut oil, and I use about a tsp a day. Maybe two. Is that enough to make a difference in gas?
Edit to add: It is worst in the late afternoon and evening. Morning is fine.

That seems like a lot of dairy to me. I am good with a little dairy, but I get stinky gas if I have too much.

Has anything happened that could change your gut flora lately? Antibiotics? More probiotics? Possibly picked up a bug from undercooked chicken? Did the way water is treated where you live change? Have you traveled at all?
Are you feeling more rushed when you eat and possibly swallowing air?
Did you start drinking mineral water?
Is it possible that you have started ingesting more protein?
