Why do people forget the many high carb vegetables?

Everytime I see a thread about needing more carbs, people always start recommending either fruit, whose sugars and fructose are suboptimal, or "safe starches" like sweet potato or rice which aren't paleo at all.

Butternut squash, beets, red cabbage, eggplant and carrots are all high in carbohydrates. It would be easy to get 400 carbs a day using these foods.

Why do people revert to non paleo foods when perfectly good paleo options provide carbs just as well?

I really don't! I even hate gum. I have to force myself to thoroughly chew my food. It's probably a major component of my digestive troubles.

She is debunking the media perception of the diet but not the diet itself. I don't know why so many people think the paleo diet means eating nothing but 3 pounds of meat per day. It isn't.

can you refresh my memory as to why sweet potatoes aren't paleo? or why fruit is suboptimal?

Sugar and fructose are not "suboptimal". Tubers are paleo, meaning sweet potatoes and white potatoes. Quibble about rice if you like.

400 grams of non-fiber carbs: 16+ pounds of red cabbage or 9+ pounds of butternut squash or 31+ pounds of eggplant or 13+ pounds of carrots

Tell me you're going to eat even a couple pounds of one of the above in a day.

Because, rice 100g (cooked)= 28.7grams of carbs banana 100g= 22.8grams of carbs sweet potato 100g = 20.1grams of carbs apple 100g= 13.8grams of carbs

AND.... butternut squash 100g= 10grams of carbs carrot 100g= 9.6grams carbs.... NOT TO BAD, BUT... red cabbage 100g= 7.4grams carbs beetroot 100g= 7.1grams carbs AND eggplant 100g= a measly 5.7grams of carbs

Personally, I think most people would find it very hard to go over 100g carbs per day eating any of those vegetables (1.5kg of egg-plant... I think not!), let alone 400g of carbs!!!!

Basically, sweet potato, rice and most fruit have alot more carbs than those veges.

  • Satiation. It feels like a "real meal" when I have a small serving of rice to accompany the meat and veggies. Potatoes and sweet potatoes don't do that for me. Not nuts, either. Perhaps purely idiosyncratic to me. Having a nice, hot meal (and that feels like a complete meal) at fixed times help to anchor my circadian rhythm.

  • Convenience. I rarely cook, so it's important that restaurants often serve rice, while few serve appropriately sized dishes of potatoes or (even more infrequently) sweet potatoes.

  • Expense. White rice is very, very inexpensive in comparison to fruit or dishes of veggies. Moreover, I am personally accustomed to throw out excess/leftover white rice. I have difficulty doing that to even white bread.

  • White rice never tempts me. Without meat or veggie to sauce it over, it is unpalatable. Having bananas around is not an option for me. Gone.

Here is the secret truth: eating veggies is HARD. Even if you like them. Wash. Peel. Chop. Cook. Chew. Chew. Chew. I get 50-75g of carbs a day through non starchy veg alone, and really, some days I pull out the blender and make "soup" so I don't have to chew.

I think the hidden question people are answering is, "what carb can I eat that is more convenient and more palatable then 3 bell peppers?" Really, this may be the hardest transition to paleo for a lot of people.

To be honest most of the vegetables we think of as paleo are not really paleo. But we can't go back in time. We have to eat what is available to us today.
