Why am I so tired?

I've been doing 80/20 paleo for the past 4 weeks and have noticed a definite improvement in body composition since then. However, I also have NO energy. I wake up in the morning tired (after 8-9 hours of sleep) and basically have to drink coffee/green tea all day in order to not pass out at my teaching job. By the time I am finished with work, all I want to do is go sit on my couch until it's time for bed.

I used to be a very active person, so I'd really like to figure out what the problem is and fix it. My current height/weight is 172cm/63kg.

My diet for a typical day is as follows:

Breakfast: 3 scrambled eggs and some almonds

Lunch: Korean food, minus the rice. Usually some sort of soy soup, fried meat, and lots of green veggies. Fried tofu on occasion.

Dinner: 6oz Grilled or baked chicken, large salad, glass of red wine.

Snacks Sweet potato (or home fries), almonds, and a small frozen yogurt.

Any ideas/suggestions?

Alternatively, lower your carb intake and get into ketosis.

I see your point regarding the downsides of doing 80/20 paleo. Unfortunately, Korea has a very communal food culture, so skipping out on the cafeteria lunch isn't an option. Perhaps I can eat just the vegetables and bring some meat or eggs to eat once I return to my office.

Personally, I do not agree with the 80/20. It keeps your body in a "middle" situation. By eating soy soup, yogurt, too many potatoes, fried meat, you're not allowing your body the switch to a fat burner metabolism, and you keep it on the edge of a sugar need. Don't play like this with insulin, Go Paleo for real for at least 6 weeks, and see if anything changes. My 2 cents.

Looks like you're not eating a lot of fat. Try adding plenty of fat.

I would also cut the soy if I were you.
