Which vegetables can you eat raw?

Quite literally, which ones are ok to eat raw? Or is it ok to just eat all vegetables raw so long as you find them palatable? I was thinking about carrying around some sweet potato to eat kind of like an apple because I believe starches are better than fructoae.

Why do you feel the need to cary food around? If you eat proper meals, you might not need to eat for several hours. I can easily go 5 hours between meals these days (This was not the case before I switched to paleo).

I like raw spinach in my "tear and crunch" meals but I've never enjoyed it cooked.

I believe you should cook potatoes. I cook my veggies, except for when I am eating a salad, because I digest them better that way.

you can eat sweet potatoes raw. however, they do contain trypsin inhibitors which make protein hard to digest. can you cook the sweet potato and wrap it in tin foil for easy travelling? also, brassica vegtables can be eaten raw unless you have a thyroid disorder then they need to be cooked.

Carrots,garlic,onions are best raw.

I eat a ton of raw greens, celery, cukes, etc., but I cook tubers because I find them much more palatable that way. I can go either way on cabbage, broccoli, or cauliflower and peppers among others. If you happen to know what kohlrabis are, they are like tubers in appearance but the bulb forms above the ground and I find them delicious either raw or cooked.

White potatoes are considered at least mildly toxic raw; I'm not sure about sweets. I know many starches are "resistant" or indigestible raw while highly nutritious cooked.
