Two months into Paleo, how am I doing?

First of all, I know this question gets asked a few times a week. And I promise to only ask once, but thanks in advance to anyone who reads and critiques (or affirms) my daily habits. I'm about two months into a paleo lifestyle and I think I've got things down pretty good, but this will be my confirmation.

21 year old guy, 5' 11", 160 pounds. I fast randomly, but about once a week for 36 hours (dinner to breakfast.) I would like to trim down on my body fat percentage some more. Other than when I get outside, I work at a computer about six/eight hours a day.

07:00 AM - Wake up and run 2-4 miles with my dog everyday.

08:00 AM - Breakfast: 3 eggs, 1/2 spaghetti squash, 1/4 onion, one bell pepper and one chicken sausage smothered in homemade hatch green chili sauce. Supplements: 1000mg Omega-3 Salmon Oil, Zinc, and Probiotics.

08:30 AM - 11:00 AM - Two cups of coffee with three tablespoons whole cream.

12:00 PM - Lunch: 3 cups mixed greens with handful of grilled chicken (or shrimp or salmon), carrots, chopped almonds, feta cheese with olive oil & balsamic vinegar. Supplements: Probiotics

03:00 PM - Snack: Apple with a few tablespoons almond butter mixed with coconut oil and shredded coconut. Glass of green tea with shot of lemon juice.

05:00 PM - Either a primal workout, 5-10 miles of mountain biking, swimming/hiking with my dog, or some wakeboarding (in the summer.)

07:00 PM - Dinner: Good amount of protien (chicken, pork, beef or fish) with lots of veggies. Supplements: 1000mg Omega-3 Salmon Oil, Zinc, and Probiotics.

10:00 PM - Snack: Primal bar (or two) with handful of frozen blueberries. (Sometimes I'll make a smoothie with one scoop primal fuel, three tablespoons almond butter and coconut milk or water.)

I can not, for the life of me, fall asleep on an empty stomach. Is that weird?

11:00 PM - Lights out.

Yes too much omega 6.

I like my coffee black just as much as with the cream, so that shouldn't be a problem. What is there reasoning behind the almond butter reduction? To much Omega-6?

I like it. Nice job. If this is working for you keep it going.

The few changes you might make over time:

The cream is kind of a morning snack. You can likely combine with breakfast or get rid of it. The almond butter could be reduced. However don't do that now.
