Tips for making Paleo Hollandaise sauce?

Any tips for making paleo hollandaise sauce? Anything to watch out for?

Oh! I had no idea you could buy it from a shop! I've never seen it for sale here in the UK - though now you have mentioned it, I'd be surprised if some of the big firms and supermarkets haven't found ways to adulterate yet another innocent food!

Very true. No problem if you make it from scratch. But if you buy it from the store than you get somE extra ingredients. Thanks everyone for the tips! This is going to be great!

What on earth is NOT paleo about Hollandaise? I can't think of an ingredient (butter, eggs) which I could query?

French cuisine can be so paleo. I never made it with sugar and it was hella grub.

Two words: Blender Hollandaise

There are lots of recipes out there, here's one:

1/2 cup butter 3 egg yolks 1 Tbsp. lemon juice 1/2 tsp mustard powder and/or Dash of cayenne pepper

Place egg yolks in blender with the lemon juice, mustard and/or cayenne, turn blender on high speed for 5 seconds to blend. Melt butter in microwave or on stove until almost boiling. Turn blender back on gradually pour in butter in a drizzle. It will only take 20 or 30 seconds to come together.

Blender Bernaise is only a little more work, using the same method.

never do hollandaise over direct heat, always do it in a (i prefer stainless steel) bowl over a simmering pot of water.

Joel Robuchon has a pretty foolproof recipe in his book. his way is the easiest way ive found to do it. And i've never even heard of adding sugar to hollandaise sauce until today, so go figure!

Practice makes perfect. Hollandaise is a pain in the butt, but it tastes sooooooo good. The most important thing I can recommend is if the mix starts to separate or curdle drop in a small bi of water and whisk it in. Keep an ice bowl handy.

hollandaise sauce in itself is paleo (ish).

This recipe looks pretty easy, though not 100% original.

The thing to watch out for is your mixture splitting, and/or your egg yolks scrambling. to get around this you normally take the pan off the heat before you add the eggs.
