Salmon jerky without ANY sweeteners, wheat/soy added

I can't find salmon jerky at any health food store or online that doesn't have ANY form of sweetener added, as well a wheat/soy. It also needs to be gluten free. I'm just looking for salmon - salt - spices.

Does anyone know of a brand that sells this?

I don't know about jerky, but I've seen smoked salmon (not lox, I mean the big fillets) that matches those criteria. You could probably make it into jerky yourself in the oven. Beef jerky recipes suggest 4 hours @ 250F, spread on a baking rack over a drip tray.

Make it yourself. Cure, thinly sliced strips of fresh salmon by rubbing it with abundant sea salt and black pepper, wrap in plastic and cure in the fridge for 72 hours, take 'em out of the fridge, rinse under running cold water, pat dry with a clean cloth and bake on a lightly oiled cookie sheet for 24 hours at 180ºF.
