Rhubarb is or isnt?

Is rhubarb a no or a yes? I have a bunch of organic rhubarb in my yard and would like to use it up. It is considered to be a a vegetable but the United States court system calls it a fruit and I am not sure where it lands on the scale of good and bad.

Scientific classifications should alway trump legal classifications, but that said I think classifications are irrelevant. I think you should look up the nutrient values of rhubarb and decide if it fits with your goals.

I've heard rhubarb was used as a laxative, so look out for that.

its lands on the scale around AWESOME. a lot of recipe load it up with sugar to cut into the tartness, but IMHO it delicious on its own. try roasting it with spices (maybe a touch of honey or maple or something) and having it over pork loin. and it always is amazing with wild strawberries with some cream. when i was a kiddo i used to eat it raw like celery, but i lost that ability in my owd age. i do love it roasted search for roasted spiced rhubarb compote and you will get a bunch of easily adaptable recipes. enjoy it! the season is short!
