Woke up to crying in the kitchen today...

Does anybody have a functioning recipe for a pancake variation that avoids dairy and eggs?

NUT BUTTER PANCAKES. It's honestly the easiest, healthiest & most realistic psuedo-pancake recipe I know of. Nut Butter (macadamia/almond) + Egg white/gelatin (mix them) + hot skillet and some butter/coconut oil. Pour a glob of the pancake mixture onto the skillet and flatten with a spatula. Flip until it's sturdy and brown on both sides. Take care not to burn them! Put the skillet on low heat. After it's done, season with unpasteurized sour cream/goat cheese, onion chives and diced tomatoes. My Greek grandmother's recipe. If you're trying to avoid eggs/sugar use Knox gelatin and stevia.

Egg whites are the allergenic part. Only extremely serious allergy sufferers need to worry from egg yolks. It's not common to react to the egg yolk, but probably not unheard of. I suspected I had an intolerance to egg whites and cut them out of my diet for a while and didn't notice anything getting worse or improving so I added the eggs back in and I feel the same.

I'm so grateful I can eat them. What a hassle it would be to have to avoid them!

Eggs are a common source of food intolerance, esp. for those with auto-immune issues.

I mash a banana with almond butter and fry like you would a pancake.

I've used a banana, shredded coconut, and cinnamon. you have to play with ratios depending on the size of your banana (that's what she said)

The difficulty is in replacing the eggs. The dairy can obviously be replaced with coconut milk. The problem is that if you aren't using wheat flour, which has gluten to keep things together, then you need something else that works as a binder. That's what the eggs provide.

Anyway, here is an idea for "eggless eggs" http://detoxinista.com/recipes/how-to-make-flax-eggs-or-chia-eggs/

I haven't tried the recipe, but it makes sense to me. Other binders are guar gum and xantham gum, but you may not want to go down that road.

My son is allergic to eggs and all dairy. I use coconut milk and mashed banana instead of eggs. Tastes great!

I don't have a specific recipe but I've replaced egg with ground flaxseed and water whipped up to a froth in the Vitamix blender.

That's not a pancake, that's a hashbrown.

well if your avoiding eggs because your intolerant then apple sauce (sounds wierd but trust me!) is a great and affordable binding substitute. I use in in everything from pancakes to brownies ect -- good stuff. you dont need to go all complicated and unnatural like xantham gum -- icky stuff!
