On-the-go cold Paleo meals?

My husband drives all day and doesn't have access to a microwave or anything for lunch..he eats in his truck right out of a cooler.

We are just starting Paleo today and I am afraid it isn't going to work if he's going to have no choice but to eat a salad every day, as he will get very bored with that.

What are some good meals to eat the he can pack and not need to reheat?

What time does he leave before he eats his lunch? He needs to have a very good heat-sealed thermos full of stew/soup with plenty of protein/fat. I'd also make sure he has a big 'ole foot-long sandwich (made with paleo bread or lettuce-wrapped) Italian sandwich full of salami, turkey, ham, lettuce, tomato, peppers, onions, and guac (if he likes guac).

I get a good quality deli roast beef (medium rare) and roll it up with Swiss cheese. Two slices of beef and one slice of cheese. You can also put a slice of avocado or tomato (or pretty much anything else) in the center as you roll it up. A smear of horseradish or mustard is nice too. Five or six of those little rolls makes a nice lunch.

This of course depends on if you are eating cheese...leave it out otherwise.

Hi Michaline,

You can easily make a great and healthy salad in 10 minutes: Cucumber, Tomatoes, Onion, Garlic, Egg, Olive Oil, Tuna, Salt, Pepper, Basil.
Very simple but yummi! The Paleo Recipe Book got many great 'takeaway-recipes' if you like to get more resources for your husband. This one site inspired me to get it for my boyfriend (engaged :)) http://timreviews.com/paleo-recipe

Avocado, sardines, tuna, salad...

I like peeling & freezing roasted sweet potatoes. Put them in his lunch it'll be like sorbet by lunch.

Also, pretty much any leftover meat works cold... as long as you're following safe food-handling temperature guidelines.

I fry up some fish/shellfish, put it in a lunchbox with some salad and veggies cooked in coconut oil and just eat it cold. I don't mind it but your husband might.

Salads can be pretty substantial and varied. You can add all sorts of cold meat, eggs or nuts to them. I like to fry some almonds in a pan with coconut oil, peppers and onions and then mix in some raw leaves, chopped cucumber, sprouts and stuff. Herbs are your friend.

Other options:

  • Fruit
  • Nuts on their own
  • Raw food bars
  • Paleo jerky
  • Paleo sushi
