You'll find a whole spectrum of opinions here, but I think that a majority would say an apple a day is fine. Some love/hate nuts, love/hate bananas, love/hate coffee (well, I think most like coffee).
It sounds like you're off to a terrific start with your diet plan. You are eating a little fruit, but not juicing them to get all the sugar and none of the soluble fiber, so that's good. It sounds like you're eating plenty of veggies and meat and fat.
Like you, when I first started out, I was meticulous in figuring out what nutrients I was getting. After a while, I realized that I needed to figure out how to eat the right way without thinking about all those aspects. Hopefully, as time goes on, you'll start to be able to not have to track every little detail. It's actually simple. Mostly veggies and meats (including eggs). Occasional fruits and nuts and seed, and the occasional treats like a SMALL amount of chocolate, alcohol and dairy-if you can handle it.
