New to Paleo

My husband has a moderate form of Ulcerative colitis which is a inflammatory bowel disease. He was diagnosed about 3 years ago and on his second pretty severe flare up. We have done some research and found that some studies are showing Paleo could potentially put him in remission. I have never been one to much care what I ate. Fairly healthy so I am extremely uneducated in this lifestyle. I understand the basics, but maybe need some motivation, pointers, do's and dont's. One set back is my husband is not a huge vegetable and fruit person. So some advice to possibly make this am easier adjustment for us both. I love veggies and some fruit. But I LOVE my salad dressing... HELP. :) Thank you in advance
