Before going Paleo I [BLANK].

Before going Paleo I used to hate Coconut and everything that had to do with it.

Now that I stir fry everything in coconut oil and use it in a lot of stuff I can't get enough of it!

I want to eat the chocolate covered coconut in the box of chocolates and eat the coconut cake, but now I can't!

What's your "Before I went Paleo I [Blank]" story??

Lastly, not eat organ meats. Fat, sinews were throwaway.

also try to get calcium from dairy... be indifferent to hormones and antibiotics in beef, the distinction between grass fed and grain fed, and for veggies (to a lesser extent) pesticides.

I used to be a cannibal until I found that human flesh, like pork, is high in PUFAS.

Before: I loved the convenience of pre-made "healthy" meals, until i came to see how processed and unhealthy they are.

I would eat things that I thought I was supposed to (like yogurt, whole grains) even though they upset my stomach.

I thought bloat and stomach pain were normal.

Before, I was NOT as happy, healthy or strong!

Before going Paleo I used to make the most incredible fruit pies. My crusts were the tenderest and flakiest. (My secret ingredients were vinegar and vodka.) Now my pies, if I make them, are made with nut crusts and they are not quite the same.

Instead of baking, I cook more. Before Paleo I used to ruin meat. Now I've gotten more proficient but not yet perfect.

Before Paleo I loved to gorge on challah bread. Now wheat products give me migraines :(

Before Paleo I loved to collect kitchen gadgets. Now I'm trying to figure out how to get rid of stuff.

I used to not like coconut very much. Now I eat coconut oil and coconut butter by the spoonful.

Before going Paleo, I used to:

  1. ... be a vegetarian (14 months) thanks to all of the misinformation I was fed. ... Now I have happily found my balance once again. Bring on the bacon and weight loss.

  2. ... believe grains were harmless if consumed in the proper portions. ... Now I recognize my gut is sensitive to grain consumption.

  3. ... have knee pain thanks to pattela femoral syndrome. ... Now I walk, run, crossfit, and experience life with little to no pain; it's practically non-existent.

  4. ... have the impression all fat consumption was bad for you. ... Now I enjoy consuming fat, and feel the benefits of healthy consumption.

Before going Paleo I used to:

*Eat a bunch of tofu, and now I wouldn't touch it for any reason.

*Avoid fat in any form, and now I make myself add more than I'm comfortable with.

*Be really proud of my vegetarian chili and lasagna recipes, and now I'm proud of my Paleo chili and lasagna recipes!

*Bake a lot more. This one I miss, because my coworkers don't like any of the gluten-free, no sugar added treats I've made for them! I have all this baking equipment, and no use for any of it!

Before going Paleo I used to weigh more, hurt more, have worse skin, have a mild thyroid problem, get hangry (hungry/angry) if I didn't carry a snack with me, and knew A LOT LESS about food and actual nutrition!

Before: I had terrible insomnia for 6 years. I was also depressed from the drugs I was given. Now after going paleo (and with the help of one bottle of food based supplements from my naturopath)I sleep lik a baby early single night, take no drugs and have zero depression.

Before: I would think of food and graze all day. I was addicted to sugar in an out of control way (like, drive to the store to get a tub of Reese's mini peanut butter cups and eat a bunch in the store parking lot out of control.). Now I can keep treats in the house and not even give them a thought -as long as I don't touch a speck of the stuff.

Before: my teeth would ache and I would get yeast infections constantly. Now, all gone.

Before: Loved all kinds of food and ate like everyone around me. Now I have to plan ahead, cook more, and explain what paleo is on a pretty constant basis :). No more easy drive in meals...

... eat stir-fried (now I understand the evils of PUFAS) ... occasionally eat peanuts ... feel guilty about not eating brown rice, instead of white ... control my egg intake (I still do, but not as much and for different reasons) ... try to incorporate beans into my diet to get more fiber

Before paleo I would "save" my dinner calories and have a slice of cake instead because I thought a calorie was a calorie above all else.

Before paleo I had awful knee pain that baffled doctors to the point of an exploratory arthroscopy. After giving up gluten my knee never ever hurts.

Before paleo I used to spend all day thinking about food and reading "healthy eating" food blogs, daydreaming about how to make low fat cookies and brownies. Now I think about other things and my last food daydream was about steak (although to be totally honest I do still think about sweets sometimes, just much less!).

Before Paleo, I used to try all sorts of ways to lose weight and frequently had stomach pains (which I thought were normal). I tried everything from the SLC, counting calories, exercising more, etc.. but none of those methods were sustainable for me as I was still consuming processed, starchy, and sugary foods and rarely cooked at home.

After Paleo, I've learned a lot about this lifestyle in the 6 weeks I've been in it, and I love it. I've learned about self-discipline, lost 10 lbs, I cook more often, started supporting my local farms, and don't have any bloating or stomach pains like before. What started out as a "diet" has now transformed into my new lifestyle. I've also encouraged many of my friends to start making healthier decisions when it comes to their food.

On special occasions, I may break my usual eating habits, but I have also learned that it's not the end of the world and to just resume where I left off.

Before paleo I used to love the hell out of fast food.

Before paleo I used to think that me picking "whole grain" breads made me healthier that the guys getting white bread. Now I realize there is no damn difference.

I have so much variety in my diet now I don't know what to do with it all. In fact I look back and can't believe I was content to eat the same breakfast every single day (a hot pocket).

Before Paleo my primary means of cooking was using a microwave oven (..for heating up frozen dinners). Since going Paleo I have not used my microwave oven at all.
