The most likely answer you will get is that you shouldn't be counting at all, since counting "isn't paleo."
However, if you're looking to restrict carbs for weight loss, then yes, you count them, minus the fiber. That's what Atkins called "net carbs."
If you're of normal weight and have a healthy metabolism, there's no reason to restrict whole-food carbs. I see you're 14...young, active people need and can Efficiently use carbohydrates in their diet.
Low carb is no longer popular in the paleo crowd, so that is likely why you received a down vote, which I voted back up.
