My Paleo Diet... Advice Please

I made a previous post and made tweaks based on recommendations but could still use some help. Some info: Majority of my meals are cooked in bulk to take to work, so I need quick and easy as i work a lot of hours. I also lift weights regularly and am bulking. I feel I am having trouble getting enough carbs/calories since I have switched to paleo, and find myself hungry. I would appreciate any help on what else I could add to my diet that would be easy and filling. Also I know everyone is against the casein shake, and would appreciate any advice on what another good large source of protein I could take before bed. Thanks

  1. Breakfast
    3 organic eggs
    2 strips bacon
    fried in butter
    1 avacado
    1 cup coconut milk

  2. Snack
    Yogurt Apple + Banana
    ?? advice ??

  3. Lunch
    1 chicken breast or 1 turkey breast
    organic salad: baby spinach, tomatoes, spring mix
    olive oil

  4. Pre-Workout
    whey protein shake with olive oil
    1 cup coconut milk

  5. Post-Workout / Dinner
    rotate between beef/turkey/salmon/shrimp/tuna/sardines/sausage
    1 cup broccoli
    1 plantain or 1 sweet potato fried in coconut oil

  6. Before Sleep
    Casein Shake 1 cup coconut milk

Look at perfecthealthdiet.com for a defense of potatoes and rice. Basically, if you believe it's ok to eat sweet potatoes, then you should also be fine with white potatoes. They are very different plants, but both are plant storage organs from South America that most people's ancestors have not eaten for more than a few hundred years. White rice is nearly pure starch. If you digest each fine and have no blood sugar regulation problems, I'd go for it.

Eat much more. Try dark meat instead or as well as white meat, and snack on nuts - walnuts and almonds.

I definitely agree that I am underrating.. before paleo I was having no problem, but eliminating rice/bread/oatmeal, has really made it hard and I havnt found what I could really replace them with. I thought potatoes and rice were bad?

i am 155 looking to bulk up 5-10 more pounds. I have an extremely fast metabolism so it is challenging

Yours definitely does not look like a bulking diet!!! Maybe you could gain weight on this if you weigh 120 lbs.

Your food choices are good, although some may disagree with using processed shakes over real food. The shakes won't matter if you undereat. You're right that you probably need more calories in the form of carbs for bulking, although I bet you could stomach more fat and protein too.

Bake a bunch of potatoes or nuke them on demand at work. Also, white rice is very portable if you believe in rice as a safe carb source.

Breakfast looks good. It should be enough food but if it is not you may need to add some food here.

• Snack Yogurt Apple + Banana

The apple and bannana have a lot of carbs which is fine.. However they might be causing hunger later on. Perhaps move this pre or post workout. If you nail your breakfast at some point you will make it to lunch. Without a snack. Perhaps some almond butter here that is not optimal but evetually you elimnate the snack and the almond butter.

• Lunch 1 chicken breast or 1 turkey breast organic salad: baby spinach, tomatoes, spring mix olive oil

Lunch seems too small.

• Pre-Workout whey protein shake with olive oil 1 cup coconut milk

• Post-Workout / Dinner rotate between beef/turkey/salmon/shrimp/tuna/sardines/sausage 1 cup broccoli 1 plantain or 1 sweet potato fried in coconut oil

Looks good

• Before Sleep Casein Shake 1 cup coconut milk

You coul dsub in one cup cottage cheese if needed. Or make your own casein shake out of a high quality protien.
