HELP! Paleo Christmas!!

I want to make a Christmas Pudding but I am struggling to find any recipes. It has to be nut free!! Please can someone help.

Given their low proportion relative to other ingredients, flour and breadcrumbs are used primarily as binders, so you should be able to substitute some mixture of tapioca flour and/or arrowroot flour and/or potato flour. You can substitute puffed rice pulsed in a food processor a couple times for breadcrumbs if the texture is really off, assuming you don't have any objection to puffed rice. Most of the recipes I've seen have a pretty trivial portion of nuts, so that can just be omitted - there really isn't anything to approximate the texture of nuts in my experience.

My bad, I didn't realize 'Christmas pudding' was a specific beast.

I'd say make it traditionally but just don't use nuts. I hardly think they'd be missed.

Look into Panna Cotta... it's an Italian custard-like desert thickened with gelatin.
