Eggs are a good choice as part of a healthy, balanced diet. Eggs are a good source of,

  • Protein
  • Vitamin D
  • Vitamin A
  • Vitamin B2

For substitute of egg, you can go with the same food which contains egg sources, like for protein you can go for Beans, Yogurt, Milk, and Soymilk. For vitamin D Spinach, Soy beans, White beans, Foods fortified with vitamin D, like some dairy products, orange juice, soy milk, and cereals. Sweet Potatoes, Carrots, Lettuce are with Vitamin A.

Beef, pastured chicken/pork/turkey/duck, sardines, salmon, etc. for your proteins.

in baking, in mayo, a souffle, or as an omelette??? eggs are used for so many things so you'd have to find specific substitions for each one. i don't eat eggs so i have found gelatin to get an egg like texture for some of the dishes i prepare. obviously, scrambled eggs are out of the question haha

I suppose you can construct a similar food with a combination of tallow and offal.
