i could probably eat two pounds of cheese because cheese tastes awesome but i don't think i could finish a 1-pound steak.

is palatability more imporant?

Well, there's more to cheese than protein -- a lot of fat and salt, among other things (and maybe some calcium, depending on what the rest of your diet looks like). Some people who want to get away from craving cheese use more lard for cooking, or allow a little more salt elsewhere in the diet, etc. I can sure eat a lot of jerky! :)

I'm one of those "some people" @acm is referring to. To kick cheese and potato chips, I had to start adding a lot of lard, olive/coconut oils, and jerky. And dark chocolate.
