Why are there bubbles in heating beef fat?

So when I put beef suet in my crock pot on low to make beef tallow, after like an hour the liquid in it has bubbles rising from inside it and disappearing - just like boiling water. What's going on here? Are the bubbles a sign of too much heat? I want to avoid any problems associated with overcooked fat, like oxidative damage or what have you.
