Nutrients in those "odd bits" of the animal

I'm enjoying eating those organ meats and other non-muscle meat parts of cows and pigs. I'm curious to know the vitamin and mineral content of such "odd bits" to see if I can validate what I've heard a few times - that one can get all nutrients from consuming only animal parts. No, I'm not planning to drop fruits and veggies from my diet but I'm nonetheless very interested in the data. Yes, I can find a bunch of the data from searching the USDA Nutrition Database. But, I bet there's plenty I won't find and, hopefully, someone has collated this data into one convenient document/web page.

Make pate and you'll go from not minding the taste to loving it! Might help overcome the mental block.

Liver,imo, is the most nutritious food in the world.

What are the nutrients found in Bone Marrow ?

Chris Kresser has a good post on the health benefits of liver specifically. I have tried eating it lately and I just can't do it. It's a mental thing, i don't mind the taste, but the thought just grosses me out.
