Coconut oil, ghee, palm oil etc. Do/should we store them in the fridge or a dark fairly cool pantry?

Yeah, same thing for me- even on really cold days if the sun is hitting us for a long time it gets ridiculously hot. Because it's overcast for the most of the year I leave it in the pantry, but as soon as it's spring everything goes in the fridge. Better longevity anyways!

Not to my knowledge...the bacon grease hardens, but it's still super soft. It's almost a ghee-like texture as far as how soft it stays even when in the fridge. I wouldn't feel comfortable leaving bacon fat at room temp for weeks on end.

What's the reason for storing bacon grease the fridge? I thought they were find outside. In the fridge, they harden.

the temp fluctuations in my brooklyn apt. are crazy - super hot or super cold - it's hard to keep an even temp. i definitely worry about the integrity of oils holding in such an up and down atmosphere. it all goes into the fridge for me. yes they turn a bit cloudy and might solidify a bit, but pulling out and having on the counter before using and while prepping has been aces. the cold does not affect its quality.

Butter and sesame oil are in the fridge.

Coconut oil, olive oil, and ghee are in the pantry (cool/dark).

I cook with only coconut oil and red palm oil. I store both of them at room temperature all the time, all year round.

When I had beef tallow and pork lard I'd keep them in the refrigerator.

I store everything in the pantry where it's cool and dark. Especially ghee. That never goes in the fridge since we use up a jar within a month. Bacon grease goes in the fridge of course.

I leave everything on the shelf, except bacon grease (fridge). Seems to be fine.
