No because people in the Bay Area are more likely to be vegetarians or vegans.

Lisa's Counter Culture in Palo Alto does a class on offal: http://lisascounterculture.com/?page_id=249

The most recent class was in early December, but I'm sure she'll announce more dates in the future if there's enough interest! I took her kombucha-making class and she's a great instructor! :)

I went to Incanto last month, it was the most amazing meal of my life. The tripe was amazing.

You might want to stop into Incanto on Church St. in Noe Valley. The chef there (besides being top chef winner) is a resident professor of offal and can point you in the right direction I'm sure.

The restaurant itself is also excellent.

I haven't come across anything like this. Lots of butchery classes but nothing focused solely on offal. As far as sourcing, all of the big players in the grass-fed movement (Marin Sun, Terra Firma, etc) all offer offal either through their webiste, the farmer's markets and CSAs.

You might contact your local WAPF chapter and ask them. They probably can refer you. Also, Three Stone Hearth, a WAPF kitchen in Berkeley, might be able to help you.
