I'm considering consuming nut butters for IM fasts but need to minimize protein consumption. Which nut butters would be suitable, if any? I would imagine at a minimum coconut butter should do.

Well, coconut is not a nut. On to answering your question:
I think the best answer for you is macadamia, for more reasons than protein. I quickly looked up 3 nuts: almond, hazelnut, macadamia. 1 Cup chopped nuts are 20g, 17g, 10g respectively. The benefit of macadamia's is that, amongst nuts, they are the lowest in O6 pufas, and highest in mono and sat fats. They still have alot of O6 but far less than the others.
