Nope, I don't refrigerate. I've stuck it in there in the past and it gets too hard. I actually prefer my coconut oil be liquid and most of the time it is. My indoor temperature is almost always 80+F.

Personally I think you would be better off upping the carb content of your diet to reach your cal needs. Nut based paleo baked goods should be a treat food imo as they aren't necessarily that healthy.

How hard was it for grok to get into a coconut? Should we treat coconut meat/butter similar to that of other nuts? The challenge of harvesting the edible portion is so great but worth the nutritional density.
