is there a nondairy lowcarb paleoish cheese recipe?

i cant do casein because it causes an extremely painful rheumatoid arthritis-like reaction in all of my finger joints.

i miss cheese sometimes. im sooo glad to know that it is the cause of my pain and am happy to omit it from my diet (and gluten too). i watched my grandma and my dad suffer with RA for years and was absolutely terrified when it happened to me. ...but i miss cheese.

is there a decent recipe?

fair enough. massage received and understood. and +1 for 'crap ingredients'. so true of the vegan cheeses I've seen. a few years ago, I even bought one, believing that it was healthier. yuck. that was a one time purchase thankfully.

There are tons of vegan "cheeses" out there, most filled with crap ingredients. Some better choices include raw cashew cheese (or google raw nut cheese). If you want to splurge, Dr. Cow makes such cheeses in Brooklyn http://www.dr-cow.com/

Another popular ingredient that's a little like cheese is nutritional yeast. These are pretty good.

i'll second the cashew cheese - yum. i used to make it when i was veganish. try using kimchi juice instead of lemon. so. good.

I'll second the nutritional yeast. I actually eat cheese and I still love Putting nutritional yeast on my Sauteed kale with some garlic and butter or coconut oil; its super yummy.
