Another Question about the bulletproof diet

Skip to 48:45 I don't understand why he says no cheese(regardless of quality) and fermented foods don't a lot of people in the paleo community tout these as good?

So dave you think we shouldn't eat fermented foods? How to get the good bacteria then? Also does the quality of the cheese not matter? Do you refrigerating nuts?

Oh, another cheese thing - mycotoxins accumulate in the casein more than the fat in milk, so they get concentrated and amplified in cheese.

The "is coffee paleo" debate hasn't been won either way I think. Bulletproof coffee is a recipe, not a brand, and I tell you how to find the right mold-free coffee, and how to mix it with grass-fed butter and MCT oil to get amazing coffee that makes you feel clearer than Starbucks ever can. I'm not selling it, I have the recipe on the site because it's awesome and it's high healthy fat.

Drinking special coffee is drifting pretty far off course from any paleo diet discussion. I say Starbuks, you say Bulletproof. Starbucks. Bulletproof. Let's call the whole thing off.

He had this to say in the text that accompanied the video:

Foods like chocolate, nuts, coffee, cheese, and processed meats very frequently contain high levels of neuroactive chemicals made by the molds and fungi that inhabit them. Many of these are active in a parts per billion level. It???s one of the prime reasons that you will perform much better on a fresh & local diet. Processed foods usually contain detectable levels of toxic molds that affect your brain.

But my read of the text (still waiting for the video to load) is that he doesn't say to avoid all of these foods, but just to go for quality sources over cheaper ones.

The Bulletproof Diet includes recommendations to avoid foods that always have mycotoxins (cheese concentrates it, then adds more from the fermentation), but to go for quality in foods that sometimes have it, like nuts or coffee or chocolate. All three of those are high-mycotoxin-risk foods, which is why Bulletproof Coffee's weight loss effects are so dependent on getting good quality coffee.
