Do mushrooms spoil?

I haven't seen any evidence that mushrooms CAN spoil (but common sense would indicate that they do...eventually,) besides claims of a "non-dangerous" slimey texture to them after they've been left out for a while. I've had mushrooms for over 2 months in my refrigerator and they still look and smell totally fine.

I'm gonna eat them anyway. Wish me luck.

I have seen scotch that wasn't bottled correctly go bad. It be not pretty.

If they're bad, how come they still look, taste and smell as fresh as the day I bought them?

Often times, psychedelic mushrooms are purchased dried and I can assure you that they don't lose any potency of their medicinal properties and if they do, it's negligible.

The common ones, medium-small, button like? I do not know what they are really called. sometimes I get the white ones, sometimes the brown ones. I either buy them packaged, or I collect them using the brown paper bags, but I store them in a Tupperware in the fridge or keep them in the packaging.

I've never seen a slimy mushroom, but I'll hold on to some of the mushrooms a bit longer to see what grows on it.

I find they only get slimey if they are in plastic. In loose paper bags, they just sort of dry out.

Everything found in nature will die and decay. Mushrooms either dry up or get furry or get slimy or fishy. On the upside, if you find you can't eat them fast enough, you can buy dried mushrooms.

I had this problem where I didn't get to cook them fast enough, so instead I bought the dried kind. Unless you want to eat them raw, they're perfectly acceptable. Just soak them in water and throw out the water before you cook with them. You could also freeze them.

Also, please, please, please, wash them. There's this foodie myth that you shouldn't because they absorb water, but they don't absorb much. There was a Good Eats episode where this myth was dispelled by washing half and not washing the other half, then weighing the two halves. Turned out they absorbed very little. Think about the medium mushrooms are grown in: it involves horse droppings. Enough said.

uhh maybe you have a really cold refrigerator? If I leave mushrooms in the fridge too long they get furry o.O

Mushrooms do get bad, and if you have had them in your refrigerator for over two weeks, then they probably are bad! Good mushrooms are usually dry and crispy and have no smell. So if you find your mushrooms with a slimy texture, wrinkled outer layer or a bad odor, you can surely say that they need to go straight into the trash bin.

Let's analytically divide this into two parts:

(1) When do mushrooms begin to biochemically degrade, such that its nutrient content begin to drop? (2) How fast do mushrooms go bad, in the sense of becoming unhealthy or poisonous to eat, due to bacterial growth and waste byproduct?

And perhaps, when does the flavor begin to change? (Partly due to same reason as (1).)

they do get slimy and smelly .. im not sure how dangerous they would be to eat, but if your nose agrees with you then go for it imo.. just cook it!

I wonder if the medicinal properties of some mushrooms are lost when dried. Dried mushrooms last a very long time. My favorite spore has lately been chaga tea. I added some of it even to my beef stock. Its a potent antioxidand, and makes a nice dark colour, i dont have any rosmarin so i hope this protects meats when cooking.

When I get mushrooms they only last about 1-2weeks in my fridge! They start to smell "fishy". REALLY fishy. Now I know better, I never let them last longer than 3 days outside my stomach! Muahahaha!
