What is on the paleo diet for the fourth of July weekend at your place this year?

I am eating shrimp and crawfish and lots of steak and headed to the U2 concert tonight in Nashville......lowering my cortisol. What are you all getting into?

I'm starving too, Sara! Lol..making some collard greens and bacon and a poached egg for brunch. I wish I wasn't so into cooking...then I'd probably drop a lb or two. :P

Up here we celebrate July 1st - we went out to our uncle's farm where we roasted a freshly butchered ping over an open pit, baked potatoes in a buried fire pit, had fresh produce and home made wine. Was close to 100 people there we all just relaxed and ate good food, enjoyed the Native dancers and sat around a huge bon fire late into the night.

Sardines cooked in duck fat and Vidalia onions, mascarpone cheesecake (http://ladolceduchessa.blogspot.com/2011/03/ricotta-and-mascarpone-cheesecake-babys.html)- I use 1/4 cup of maple syrup for the sweetener and skip the lemon- organic red wine, and two big hikes with the dogs and hubby at the Oregon Coast!

i already had friends over for BBQ this weekend (they just left). we had steak tips on the grill, watermelon-tomato-cucumber-mint-feta salad, grilled peppers and garlic scapes and dessert was fresh figs stuffed with marscapone and raw honey. for breakfast we had thick cut bacon, blueberries with marscapone, wild smoked salmon, eggs scrambled with heavy cream and fresh dill. and another fig for good measure. after the beach we had ICE CREAM!!

Grilling brats we bought at the farmer's market this morning, as well as some fresh veggies. Probably a little vodka and sparkling water, cause how else are you supposed to sleep when people set off fireworks all night long?

Kebabs! My local market, Harry's, sells fish chunks (tuna, swordfish, halibut, etc.) for about $4 per pound. We'll be spearing those along with home grown zucchini and peppers and cooking them over a wood fire. (OT, anybody else having problems with critters eating their tomato plants? We've only harvested TWO undamaged tomatoes this summer!)

Possibly one or two margaritas made with fresh limes and stevia as well.
