Is Gluten free diet dysregulating my menstrual cycle?

Last December I started a gluten free diet due to my intolerance.

My last period came 8th March, a week early, making this a 23 day cycle. Last time I had intercourse was 26 february and was protected. But some research showed that early period could indicate pregnancy, so I worried.

My cycles usually last 28-31 days, and I never missed one

This month my period is a week late. I did 3 pregnancy tests, all negative and I have no symptoms at all

Could I still be pregnant, or may the gluten free diet be disregulating my periods?

Nah. Doubt it is because of a lack of gluten. That would be silly. However, since you took gluten out, you are taking calories out, and that could mean a large caloric deficit - depending on how much bread and stuff you ate - that might shock your system. GLuten food is pretty carby also, maybe you aren't getting enough anymore. I just recovered from 2 years of amenorrhea and it started when I restricted calories too much. Be careful to your body
