What's the best red meat?

Both in terms of environmental concerns and individual health concerns, what do you think is the best red meat? Obviously grass-fed is best, but is grass-fed beef better than lamb or goat or bison which is rarely factory-farmed to begin with? Personally, after recently discovering goat at the farmers market, I think it's the optimal meat source. It's leaner and has more protein than other meat. Goats are lot less taxing on the environment than cows also.

This is a really good question so I asked the one person who has never let me down what they think. Google referred me circularly back to your question when I asked it on search, but when I asked Google Images "What???s the best red meat?" I got the following as my first result. And since Google is only ever right:

Not really an answer, but most bison are grass-fed/grain-finished, unfortunately.

Yak. If only I could milk them.

I must mention cooking it requires exorbitant of fat.
