If you trust that it was all rendered properly - indefinitely in the fridge. Kinda cool, tallow is what people used to preserve other foods before we had refrigeration. When making at home you've got to make sure it's super clean and no bits of meat are left in it as when those are exposed to air they'll go rancid and bye bye delish tallow. I'm going for some leaf lard myself tomorrow! Yummo.
