I tend to eat meat on Paleo by baking large amounts in the oven at once, then freezing so I can eat the results whenever I want. Before freezing, the cooked meat cools in my fridge. Thus, before finally going to the freezer, I always find lots of cold gelatin surrounding my cooked meat. I'm wondering, can I separate this gelatin from the meat and then freeze it just like I do with my meat? I don't mind if the thawed gelatin is 'mushy' or just different in texture - only if I'm somehow damaging the gelatin by freezing it. For example, does freezing denature the gelatin proteins? I want to eat the gelatin to be healthier, so if freezing the gelatin will render it harmful to me, I need to know.
