Can I do this on nothing but eggs, fish, uncured bacon, beef bones and fat (grassfed), avocado, coconut and veggies?

Between budgetary concerns along with preferences in taste I have come up with the above. Is it possible to do this with only those foods? Or do I absolutely need to eat beef and chicken muscle meat?

Yes but that's addiction, not what your body truly craves.

That food sounds awesome! It also sounds VLC (very low carb) which is fine, if that's what you intended. If not, a little sweet potato (or similar - heck, even regular white potato sans skin) is pretty cheap and very nutritious. Liver is also cheap and nutritious, but if you don't like it... Well, don't worry about it. Danielle is correct, it's more important what you don't eat (brownies, pizza, etc.).

I use kombu as a spice for fish. I grind it in electric spice mill and sprinkle it on fish which i will cook sous vide. Or i use it to flavour stocks like in japanese cuisine.

Well its highly individual, i think theres just so much to gain from offal as a nutrition, and not much to loose. I cant absorb nutritions well. So i try to top my vitamins and minerals with offal and fish roe. And now i added some kombu for iodine. I dropped butter due to my high total cholesterol (340-460). It used to be 230, which i think is fine. I dont really care for beef as a flavor so much, but i like liver and fish.

I've been eating paleo for 3 1/2 years without ever touching offal and I'm perfectly healthy.

You dont want to cook liver very long, it will taste very bad. Just a quick sear is enough. Heart is ok for broths. Its basicly a very lean muscle meat. With slightly iron taste, more so if it isnt very fresh. Fresh beef heart grilled quickly on a coal grill is truly awsome. Just dont grill it done, it has no intermuscular fat so it will dry very fast. Lamb hearts are more tender and more convient size. I grind some beef heart in hand meat grinder and brown it and add it to the broth.

Can organ meats be simmered in the crock pot as an additive to my bone broth? I am not quite at the level where i can eat that stuff yet. BUT my bf is also paleo and will gladly eat it so it wont go to waste.

What you don't eat is more important than what you eat. You'll be fine.

Thank you!! I just want to add that I am not vegetarian/vegan etc- I just find animal muscle meat unappetizing since I started this diet. I do however LOVE everything I listed above. I crave it my body likes it etc. *checking out link now

I propose that you enter some meal plans into http://www.cronometer.com/ and see if that leaves you short of some nutrients.

I'm guessing you'll be fine, though perhaps you should add more carbs: http://perfecthealthdiet.com/?p=1177

Well i would atleast include some ruminant offal. I wouldnt do paleo without organ meats or some sort of shellfish atleast. Bacon isnt so nutritious anyway, it just very convient and tasty.

here's a good thread about limiting food intake to 10 foods

And I would say that would be healthier than standard American diets, most vegetarian diets, and nearly all vegan diets. Also, your tastes may very likely change in weeks/months, with the seasons, etc.
