Given that they are so closely related you can breed them together I doubt the difference is that significant. Different meat for different uses, bison really had that bold rich flavor.

Mmmm Bison is delicious - and in my area all the bison are 100% grassfed and along the same price as the conventional beef - so we eat quite a bit of bison. Ground bison is so good! The bison that we get tends to be very lean so be careful when cooking something like a roast so thta it doesn't dry out (I wrap mine in bacon)

Actually, beef may be higher in CLAs. However, I prefer the taste of buffalo. But then again, I'm an NDN so I may be biased.

Bison is higher in iron which is of great benefit particularly for us ladies in our child-bearing years.

The bison I've had has a fuller taste, even a hint of sweetness. It is a leaner meat.

I'm not positive on this but I think bison is leaner and to me it is more gamey tasting. I had a bison hamburger one time and did not enjoy the flavor very much. If you are buying grassfed beef though I'm not sure there is much difference as far as which is healthier.
