I am a supplier of Grass Fed and Finished Beef, Lamb and Goat and I am trying to figure out which cuts of each of those animals are the best to suggest to clients that are on the Paleo Diet. I know that having some fat on the meat is best for this diet, but being grass fed and finished our products have a lower level of fat to begin with. So, any help would be great!

For beef, marrow bones, pot-roasted cuts (especially chuck), and don't forget offal (heart, kidneys, liver). But even lean cuts will be appreciated by your paleo customers - I think the most important you can do is emphasize how healthy and well-fed the animals you propose are.
A butcher close to my home sells 10 kg packages of grass-fed beef, with ribs, steaks, pot cuts and so on. It allows customers to discover less known cuts for a lower price, while the butcher sells more in bulk and has no trouble selling those unfamiliar cuts. So everyone wins.
