I wonder how many people get tired of having to cook, and could stand to get some ideas for a quick Paleo meal.
My recent favorite is Pork tacos (total time 15 minutes)--
Chicken broth/stock (1/4 - 1/2 cup)
2 tbsp butter or other fat
ground pork (1-2lbs)
one head of green leaf lettuce
1 tbsp minced garlic
1-2 tsp cumin
dash chili powder
2 tsp paprika
diced onion & bell pepper
salt & pepper to taste
In a large skillet, saute garlic, onion & bell pepper in butter until they start to turn golden brown.
Add ground pork & seasonings, cook until there's just a little pink left in pork.
Stir in broth/stock, add can of tomato paste & mix thoroughly.
Cover, continue to cook 3-5 minutes until liquid has been absorbed.
Spoon into lettuce cups and serve immediately.
