I was wondering if someone could help me create a strict meal plan to help me lose weight but be sufficient enough so I am getting the correct nutrients to stay energized.
No. I would in fact make sure the butter is grass fed, to improve your low K2 intake. I would add some seaweed to counteract the goitrogenic effects of kale and broccoli, and I would eat at least a pound a day of your green veggies.

Your not going to lose the last 5-10lbs eating fat, your going to lose it by NOT eating fat and letting your body burn off YOUR fat for energy. So start walking, and fasting and you will succeed.
