Has anyone made buttermilk marinated pot roast?

...and if so, has anyone let it marinate for an extra few days without nastiness?

I got the recipe out of Nourishing Traditions, and being equal parts lazy and busy this week it has been marinating for four days now. In the recipe she mentioned "several days", am I going to have a crock pot full of paste in the morning having let the proteins denature longer?

Are you supposed to cook it in the buttermilk marinade? At this point can you remove it from the marinade and let it cook like you normally would with a pot roast? May as well try it, but I will disclose to you that my cooking skill is fairly low.
