I have been making kefir and yogurt fermented for 24 hours. How many carbs are still there? I am following a low carb diet of 72 grams a day so i'd like to know how much they contain. Fyi- i use goats milk.

Very little. No more than 4-5 gr of net carbs per cup, I'd say. Commercial, still sweet, kefir has about 10-12 grams, so home-made is way less. But the exact number is not known without chemical analysis, only an approximation. I wouldn't worry about it.
