Craving chips and salsa!

Hello! I was wondering if anyone knew a kind of "chip" I could make that is low carb, but still crunchy enough to eat with salsa and feel similar to a tortilla chip.

I was thinking eggplant or bell pepper to bake into a chip, but I am not sure if that would work.

Does anyone have any ideas of a good substitute? Thanks!

plantain chips are actually pretty good - they aren't as sweet as you would think. haven't tried them with salsa ... just might do that now!

Blue corn is also not GMO, at least to my knowledge. That would be my main issue with corn. I don't eat a ton of it, but I eat a little bit fairly regularly.

ironically i just ate chips and salsa a half hour ago. do yourself a favor and get Desert Pepper black bean and corn salsa

Personally, I would just eat the friggin tortilla chips with salsa because that is a rare event for me (maybe five times a year). If you are adamant about low-carb, there aren't many alternatives. Eggplant or bell pepper will not bake crispy due to their high water content.

The only low-carb chip-like options are probably pork rinds, slices of crunchy vegetables like cucumber and bell pepper (fresh), or lettuce leaves.

If you want to settle for a vessel to carry your salsa that is not necessarily crunchy, I highly recommend topping an avocado half with salsa like this:

Gotta say, I love pork skins. Also, sweet potato/root veggie chips. The chips aren't necessarily low carb but the chicharones are!

I use raw bell peppers. Better with guac than salsa, but it's still pretty tasty.

You could make radish, turnip, sweet potato, kohlrabi, etc chips. They might not be able to hold much, but I've had fun making those into chips!

I don't know if it will be sufficiently crunchy for you... but I like the outer leaves of brussels sprouts fried in coconut oil or bacon fat. They cook VERY quickly... like, just a few seconds.
