Best Simple Low Carb Recipe You've Ever Had?

What is the best simple low carb recipe you've ever had? It could be a dessert, snack, breakfast, lunch, dinner meal or you may even have an answer for each category. I want to know what was the most memorable recipe that almost had you into tears it was so epic. I would also appreciate links to the recipes. I'm in a cooking competition with some friends and the winner get's bragging rights and a personal cook for one week. The loser has to wear a bikini (we are all grown men) through venice beach.

I use bacon grease for a lot of stuff- but never thought of it for eggs! can't wait to try it.

EDIT: i just told my fiancé and his response was, "duh, how do you think i make them?" So I guess it's pretty unnoticeable to me.

this is my current obsession: Moroccan Meatballs. I wouldnt call them simple but they could definetly contend in a compeition.

Teriyaki meat patties. Seriously one of the best simple dishes I've had.

Heat equal parts soy sauce and sugar in a pan on low until the sugar is dissolved to make your teriyaki (I usually use 2 tablespoons of teriyaki per half pound of meat, the flavor is strong and goes a long way; it's 2-3g of carbs per tablespoon, so it's pretty low carb). Add a little garlic and ginger to taste. Mix it with equal parts ground pork and ground beef, and then form and cook your patties. Add a dollop of spicy mayo (mayo mixed with a little mustard powder) on top or on the side for dipping. If you're feeling fancy, sprinkle some diced onion stalks on top too.
