Why did liver make me sick?

I felt fine this morning. Great even. I cooked up some grass-fed liver from my local farmer and it sat like a rock in my stomach. A half hour later, I was sweating and running to the bathroom. My stomach is in knots and I feel miserable. What happened?

Yeah, it is supposed be a little pink on the inside. It's hard to judge when liver is done.

I've always read not to overcook liver - all the recipes I've used say to keep it pink in the middle. Like steak, any pathogens would be on the outside and the inside should be safe if the outside is cooked.

Liver turns a gray color when you cook it well, so probably

Whatever it was, activated charcoal worked like magic to make me feel better.

It was still a little pink. Does liver need to be cooked to well done?

Food poisoning would not hit you a 1/2 hour after you eat.

I'd get the book Odd Bits - chock full of information on how to cook the "odd bits" of the animal. http://www.amazon.com/Odd-Bits-Cook-Rest-Animal/dp/158008334X

You might have had a reaction to the iron in the liver. Live is very high in iron. If your iron levels are on the higher end, eating liver can cause intestinal distress. I'm speaking from personal experience about this. I just had a therapeutic phelbotomy blood draw of 500 ml to help reduce my iron and ferritin levels. I've gotten an upset gut from high iron meals.
