For how long can I keep liver in my fridge?

Hi!

I was wondering for how long I can keep a piece of liver in my fridge. I plan on eating a few slices of it as carpaccio with the salad, but the thing is usually very big and probably yields 10+ servings.

Use a foodsaver to vacuum meats. Freezes much better.

Freezing doesn't damage enough of the quality to make any difference. It does not ruin it.

won't freezing ruin the meat?

I would say no longer than 1-2 days, especially if you plan on eating it raw. You might eat it raw the first day and cooked the second, and I wouldn't keep it any longer than that.

I would also not re-freeze the liver (or any meat), as it is more likely to spoil and develop bad taste and texture. You didn't say if it was fresh to begin with, if you bought it frozen, I'd try to separate it out into portions while still frozen and thaw what you're going to eat.

I have this issue with liver too, it often comes in 1.0-1.5 pound packages but I usually only eat about 0.5-0.6 pound at a time. I usually just end up having it for 2 or 3 meals over a couple of days to get my liver fix.

Liver - like all offal - goes off quickly. I'd slice it and freeze the parts you want to eat later.
