Do you know Perceval knives? I have a set of two that I love picked up in Paris last year under pressure from a chef and have never been happier. If you want to go over the top super supreme fancy, they make one out of Damascus steel with a handle crafted from a 1967 found meteor in Russia: http://www.couteau.com/le-francais-damas_6_le-francais-damas-manche-en-meteorite-seymchan__lfdmts.html

I'd go to 100% on this because you can see the side of the Bee inset where the blade enters the handle.

I emailed my French and they unanimously agree on the Laguiole, one of them has a set and loves to pieces. Winner winner chicken dinner!

Haha, good stuff! I've got a good list of things-I-want-but-will-probably-never-have-unless-something-crazy-happens too. I did happen to find a set of these beauties for a steal though. Not as swanky as the one on the book, but nice nonetheless. So, it is a possibility that you'll be able to cross this one off of your wish list is you keep your eyes peeled.

Ok, I'm sold - I award it to you as you were the first! I guess I will be putting this in a wish-list-maybe-never-unless-I-find-an-insane-deal category. Thanks Pete!

It's pretty close I must admit. I can't find any model that matches completely though (even used ones on ebay). These knives are really nice as well though!

Yeah, it's ridiculous. Sometimes you can get lucky and find them at discount stores like Home Goods.

Great point on the chase. For whatever unknown reason I love obsessing over useless stuff like this from time to time. Honestly, it'd be more fun to hunt down the knife than actually purchasing it. +1

I would contact the photographer (name is on the cover) and ask him who his food stylist was, then contact that person. The chase itself would be worth it.

It is a Laguiole Knife

Check it via the decorations. They are pretty distinctive.

DECORATION There is a cross on the side of the handle. It's name is the Three Bishops Cross. In the past, Aubrac peasants stuck their knife in the earth so as to pray in front of the cross. Over and under the handle, the brass part is decorated with notches and the upper spring is carved. At the top of the handle, the fly rests, representing Aubrac cows herds flies. (Nowadays, there is a discussion about the nature of this symbol : some people say it is a fly and others say it is a bee).

Yeah it's a pocket knife. A poor choice of pocket knife. Here's the rule to follow when buying a pocket knife: the more expensive it is, the sooner you'll lose it. Always buy cheap pocket knives. They don't fall out of your pocket.

As far as eating with a knife is concerned, you want one with a wider blade, so it can double as a fork when you're on the road. I eat sardines with my pocket knife. I eat oysters - even open the cans - with my pocket knife on bicycle rides.

Nope, you don't want this knife!
